JONBOY345 Posted June 7, 2013 Share Posted June 7, 2013 Oh, and I'm glad to see (AJ's slant aside) all the talk of pulled pork, I get tired of people who fixate on ribs when it comes to BBQ. Not saying I don't like ribs, but most of the time I'd take pulled pork regardless of the region its from over ribs. At the obvious and blatant risk of taking AJ's tangent and making it even worse, I think the reason for that is that pulled pork gets you more bang-for-the-buck in terms of the (portion) size of the meat. You can get ribs anywhere. It's not everywhere you can get good BBQ (pulled pork). In South Cakalaky, pork is most certainly king, but we also love the chicken, beef, and of course the fixins too. Collards, corn, squash, rice and hash. If anyone is ever passing through or near Columbia, you need to stop in Lil' Pigs BBQ at 4927 Alpine Rd Columbia. It's no frills good BBQ. S4GRU Posted June 7, 2013 Share Posted June 7, 2013 I love BBQ of all types. I enjoy eating regional BBQ wherever I go. We even have New Mexican BBQ around here. The Red Chile rubbed smoked ribs at the Ranch House are insanely good, as well as the red chile barbecue sauce at Cowgirl BBQ in Santa Fe is unique and very tasty. To take Texas pit smoked BBQ and mix KC and Texas sauces together with a little bit of heat from Louisiana hot sauce is a very magical thing. Yummm. Maybe I need to fire up the smoker tomorrow? There's a Lebanon & Franklin location as well but this one is very convenient from the interstate...you'd just get off at exit 288 (Highway 111 which is a 4-lane highway as well) and go north to the 1st exit from there which is Spring Street, hang a left, and its on the west side of the Food Lion parking lot on your left. A&M Browns(same family) in Moncks Corner SC, North of Charleston on Highway 52. Is also the best! SC = best BBQ on Mother Earth! I make carnitas in my smoker. I use a Chimayo red chile/garlic rub on a pork shoulder and then smoke it for 10-12 hours with mesquite lump and tabasco white oak chips. Emmm, emmmm, yumm. *drool* And then cook it in a crock pot in a red chile stew for about 3-4 hours. Then shred, and skillet brown it. Best carnitas in the world. My wife bought it for me for Father's Day a few years ago. I do want to upgrade one day to a larger vertical smoker. But I never can find what I'm looking for. I don't like the electric and propane smokers. I keep going back to the charcoal smokers. I love to burn mesquite lump charcoal.
