Oh, and I'm glad to see (AJ's slant aside) all the talk of pulled pork, I get tired of people who fixate on ribs when it comes to BBQ. Not saying I don't like ribs, but most of the time I'd take pulled pork regardless of the region its from over ribs.

 

At the obvious and blatant risk of taking AJ's tangent and making it even worse, I think the reason for that is that pulled pork gets you more bang-for-the-buck in terms of the (portion) size of the meat.

 

You can get ribs anywhere. It's not everywhere you can get good BBQ (pulled pork).

 

In South Cakalaky, pork is most certainly king, but we also love the chicken, beef, and of course the fixins too. Collards, corn, squash, rice and hash.

 

If anyone is ever passing through or near Columbia, you need to stop in Lil' Pigs BBQ at 4927 Alpine Rd Columbia.

 

It's no frills good BBQ.

Nothing beats perfectly smoked turkey or chicken.  But only 1 out of 100 can do it right.  ;)

I love BBQ of all types.  I enjoy eating regional BBQ wherever I go.  We even have New Mexican BBQ around here.  The Red Chile rubbed smoked ribs at the Ranch House are insanely good, as well as the red chile barbecue sauce at Cowgirl BBQ in Santa Fe is unique and very tasty.

 

To take Texas pit smoked BBQ and mix KC and Texas sauces together with a little bit of heat from Louisiana hot sauce is a very magical thing.  Yummm.  Maybe I need to fire up the smoker tomorrow?

If anyone is ever driving through Tennessee on I-40 and passing through Cookeville (its between Nashville & Knoxville), try this place, its both near me and maybe a mile off I-40:

Excellent pulled pork.  There's a Lebanon & Franklin location as well but this one is very convenient from the interstate...you'd just get off at exit 288 (Highway 111 which is a 4-lane highway as well) and go north to the 1st exit from there which is Spring Street, hang a left, and its on the west side of the Food Lion parking lot on your left.  Open Monday-Saturday 10:30am-8pm.  They have a drive-through window too.

Browns BBQ. Original restaurant in Kingstree South Carolina in Williamsburg county is worth the hour and 45 minute drive. A&M Browns(same family) in Moncks Corner SC, North of Charleston on Highway 52. Is also the best!

 

SC = best BBQ on Mother Earth!

Got this bad boy at the Machine Shed in Des Moines, Iowa a few weeks back.

 

1+ pound of smoked porkchop, if I had to guess about 1.25 pounds.

They call it the Double Cut.

Also, if anyone wants to go to 17th Street in Murphysboro, they have both excellent ribs and excellent pulled pork. I usually opt for the pulled pork.

I make carnitas in my smoker.  I use a Chimayo red chile/garlic rub on a pork shoulder and then smoke it for 10-12 hours with mesquite lump and tabasco white oak chips.  Emmm, emmmm, yumm.  *drool*

 

And then cook it in a crock pot in a red chile stew for about 3-4 hours.  Then shred, and skillet brown it.  Best carnitas in the world.  Fry up some fresh tortillas, and you have one of the best dishes in thee world.

We've used a propane turkey fryer for years.

 

It's not turkey until it's deep fried with a garlic butter injectable seasoning and a Cajun Rub.

Nope, just a cheap round vertical smoker from Lowe's.  My wife bought it for me for Father's Day a few years ago.  I do want to upgrade one day to a larger vertical smoker.  But I never can find what I'm looking for.  I don't like the electric and propane smokers.  I keep going back to the charcoal smokers.  I love to burn mesquite lump charcoal.

Check out the Weber Smokey Mountain Smoker. There's two sizes, and they have two levels so you can do twice as much cooking. There's a wealth of info on it at http://www.tvwbb.com

    • In the conference call they had two question on additional spectrum. One was the 800 spectrum. They are not certain what will happen, thus have not really put it into their plans either way (sale or no sale). They do have a reserve level. Nationwide 800Mhz is seen as great for new technologies which I presume is IOT or 5g slices.  T-Mobile did not bite on use of their c-band or DOD.  mmWave rapidly approaching deadlines not mentioned at all. FWA brushes on this as it deals with underutilized spectrum on a sector by sector basis.  They are willing to take more money to allow FWA to be mobile (think RV or camping). Unsure if this represents a higher priority, for example, FWA Mobile in RVs in Walmart parking lots working where mobile phones need all the capacity. In terms of FWA capacity, their offload strategy is fiber through joint ventures where T-Mobile does the marketing, sales, and customer support while the fiber company does the network planning and installation.  50%-50% financial split not being consolidated into their books. I think discussion of other spectrum would have diluted the fiber joint venture discussion. They do have a fund which one use is to purchase new spectrum. Sale of the 800Mhz would go into this. It should be noted that they continue to buy 2.5Ghz spectrum from schools etc to replace leases. They will have a conference this fall  to update their overall strategies. Other notes from the call are 75% of the phones on the network are 5g. About 85% of their sites have n41, n25, and n71, 90% 5g.  93% of traffic is on midband.  SA is also adding to their performance advantage, which they figure is still ahead of other carriers by two years. It took two weeks to put the auction 108 spectrum to use at their existing sites. Mention was also made that their site spacing was designed for midrange thus no gaps in n41 coverage, while competitors was designed for lowband thus toggles back and forth for n77 also with its shorter range.  
    • The manual network selection sounds like it isn't always scanning NR, hence Dish not showing up. Your easiest way to force Dish is going to be forcing the phone into NR-only mode (*#*#4636#*#* menu?), since rainbow sims don't support SA on T-Mobile.
    • "The company’s unique multi-layer approach to 5G, with dedicated standalone 5G deployed nationwide across 600MHz, 1.9GHz, and 2.5GHz delivers customers a consistently strong experience, with 85% of 5G traffic on sites with all three spectrum bands deployed." Meanwhile they are very close to a construction deadline June 1 for 850Mhz of mmWave in most of Ohio covering 27500-28350Mhz expiring 6/8/2028. No reported sightings.  Buildout notice issue sent by FCC in March 5, 2024 https://wireless2.fcc.gov/UlsApp/letterPdf/LetterPdfController?licId=4019733&letterVersionId=178&autoLetterId=13060705&letterCode=CR&radioServiceCode=UU&op=LetterPdf&licSide=Y&archive=null&letterTo=L  No soecific permits seen in a quick check of Columbus. They also have an additional 200Mhz covering at 24350-25450 Mhz and 24950-25050Mhz with no buildout date expiring 12/11/2029.
